This recipe is one of our favourite to make at Christmas, and whilst it could be made anytime of the year, we’d be sure to stack on some serious calories if we made it more than once. Warning, this is not for the sweet-averse or people on a calorie or fat-reduced diet.
In fact, I’ve made this many times so that I can gift it to friends at Christmas and it makes a gorgeous gift. It’s super decadent so a little goes a long way and it has excellent crowd appeal. Most times I get asked for the recipe which is testament to it’s deliciousness. It’s easy, has 4 ingredients and big wow factor!
Chocolate Caramel Bark
40 Saltine (Salada in Aus) crackers
1 cup of butter
1 cup of brown sugar (we used brown cane here in France successfully)
pack of chocolate chips (big bar of cooking chocolate ok too but needs to be high quality)
Nuts, candy canes or dried fruit to top if you want. I even sprinkle salt if you want the salted caramel taste – yum!
Layer the saltine crackers onto a foil or baking paper lined baking sheet. Melt the butter and add the brown sugar, stirring continuously until boiling and the caramel mixture darkens slightly. Be careful not to burn it.
Pour it over the crackers and cook for 5 minutes in an oven set to 400C or 200C. Sprinkle the chocolate chips over the bubbling caramel crackers and put them back in the oven for a few minutes to melt. Use a knife to spread the chocolate out and leave to set & cool.
When completely cool, break into large pieces and store in a plastic container or freeze them for later.
You can stack 3-4 together and wrap them in cellophane with a ribbon to close. Perfect, cost effective sweet parcel.
